Cream Soup (European Style)

Cream Soup is one of the most common soups served in European cuisine. It’s a warm, creamy, and comforting dish that can be adapted into many different variations and flavors.
Ingredients
- 2 cloves garlic, chopped
- 1–2 bay leaves
- 2 tablespoons butter (for sautéing)
- 2 tablespoons all-purpose flour
- 2 cups milk or cream
- 1 cup chicken or vegetable stock
- Salt and white pepper, to taste
- Optional: chopped parsley or croutons for garnish
Instructions
- Melt the butter in a saucepan over medium heat.
- Add the chopped garlic and bay leaves, and sauté until fragrant.
- Stir in the flour to make a light roux (thick paste). Cook for about 1 minute while stirring constantly.
- Gradually add milk and stock while stirring to prevent lumps from forming.
- Continue cooking and stirring until the soup thickens and becomes smooth.
- Season with salt and white pepper to taste.
- Remove bay leaves before serving. Garnish with parsley or croutons if desired.
Tips
- For extra flavor, add sautéed onions or mushrooms before adding the milk.
- If you prefer a richer soup, use heavy cream instead of milk.
- You can blend the soup for a smoother texture.
