Traditional Indonesian Fried Rice (Nasi Goreng Kampung)

Fried rice is one of the most popular dishes found everywhere — from street food stalls to fine restaurants. Among its many variations, Nasi Goreng Kampung (Traditional Village Fried Rice) is known for its simplicity. Unlike other versions, it’s made without tomato sauce, chili paste, or soy sauce — just pure savory flavor.

Ingredients

  • 3 cups cooked white rice (preferably day-old rice)
  • 2 shallots, finely chopped
  • 2 cloves garlic, minced
  • 5–8 bird’s eye chilies, sliced (adjust to taste)
  • 2 tablespoons cooking oil
  • 1 egg
  • Salt, to taste
  • Ground white or black pepper, to taste
  • Optional: seasoning powder (chicken or mushroom flavor)
  • Garnish: sliced cucumber, tomato, and fried shallots

Instructions

  1. Heat cooking oil in a wok or large pan over medium heat.
  2. Add chopped shallots and garlic. Stir-fry until fragrant and golden.
  3. Add sliced chilies and stir briefly to release their aroma.
  4. Crack the egg into the pan and scramble it lightly until half-cooked.
  5. Add the cooked white rice, salt, pepper, and seasoning powder. Stir well to combine and evenly coat the rice with the spices.
  6. Taste and adjust seasoning as desired.
  7. Serve hot with cucumber and tomato slices. Sprinkle fried shallots on top for extra flavor.

Cooking Tips

  • Use day-old rice to get the perfect non-sticky texture.
  • Adjust chili amount for desired spiciness.
